About the Course

This qualification reflects the role of commercial cooks who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.
This qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors.

Possible job titles include:
chef
chef de partie.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

Available as an apprenticeship

On-campus learning of theoretical content will be supplemented with workplace experiences. Students will have access to workplaces which can provide experiences and learning to support the agreed units for the qualification. (for apprentices)

How will I study?

This Certificate IV in Commercial Cookery top up pathway program has been designed for those who hold a recent Certificate III in Commercial Cookery that want to take their career to the next level. This course is only for students who have completed a Certificate III in Commercial Cookery in the past 5 years. The course is part of the TAFE NSW Hospitality Professional Program held in Mudgee, the program will enable you to develop the advanced culinary and leadership skills required to achieve your goals.

Please include a current resume and transcripts from your Certificate III Commercial Cookery and other relevant training in your application. Upon acceptance into the program you will receive an individual quote based on the number of units of study you need to complete.

You will attend monthly workshops for the duration of the course. The workshops provide an interactive learning environment where you can discuss topics with your teachers and learn from your peers. The remainder of your learning will relate directly to your work role. You will undertake work-based projects and assignments to develop your leadership and culinary expertise. Your first workshop will be held at the TAFE NSW Mudgee campus, on Thursday 14 February from 9.00am-17:30. You will be provided with a detailed program and delivery schedule at the commencement of the course. The duration of this course is 1 year.

This Certificate IV in Commercial Cookery is part of the TAFE NSW Hospitality Professional Program. The program will enable you to develop the advanced culinary and leadership skills required to achieve your goals. Students will attend interactive workshops, have access to coaches and mentors and learn from dedicated teachers with extensive hospitality experience. On graduation you will gain an internationally recognised qualification - your passport to a global career.

You will attend 10 x monthly workshops, 8 hours per workshop for the duration of the course. The workshops provide an interactive learning environment where you can discuss topics with your teachers and learn from your peers.

· Course Related Materials Charge - $120.00 this fee provides you with the learner resources and workbooks for your managerial units.
Optional Cost
· As part of the Hospitality Professional Program, students have the option to participate in a culinary excursion to Sydney. You will take a behind-the-scenes tour of the Sydney Fish Markets, visit provedores, be inspired by renowned chefs and visit iconic restaurants. Cost estimate $690.00 pp.

How will I study?

Delivery Location: Orange College, March Street Campus

You do not need to be an apprentice to join this course. You will be expected to complete self paced activities, research and assignments for the managerial units in your own time.

You will be provided with a detailed program and delivery schedule at the commencement of the course. You will have dedicated time with your teacher to help you with your management units. The management units are delivered via workbooks, tuition sessions and/or workshops. The duration of this course is 1 year.
This course is only for students who have completed a Certificate III in Commercial Cookery in the past 5 years and focuses on the managerial units to prepare you to manage and run your own kitchen. You will be eligible for a discounted price for this course based on your previous qualification via RPL or unit credits. An individual quote will be made for you once all your documentation is received via the application process. Please include a current resume and transcripts from your Certificate III Commercial Cookery and other relevant training in your application.

This program includes activities which are to be completed in your own time.

When will I study?

Class attendance is Part time

Attendance at TAFE is one day per week or by negotiation with your teacher depending on your previous qualification and the units you have completed. Your starting day is Wednesday from 08:30 until 16:30.

Course length: 8 hours per week for 1 Year

A course materials charge of $120 is applicable to this course. This fee provides you with a management learner kit for you to take home.

This offer has been designed to develop specialist skills and knowledge in Asian Cookery.

Students will need to provide to wear full bakery uniform clean & Ironed, Fully enclosed Black Leather work Boots/Shoes. Pen, Folder. Padlock for locker and chef tool kit.

Students who have completed SIT30816 Certificate III in Commercial cookery will be required to attend on a Wednesday from 8:30 - 2:30 each week and 8:30 - 5:30 every third Sunday for a weekend intensive practical workshop. Students who have not completed SIT30816 may be required to attend Monday 8:30 - 5:00, Wednesday 8:30 - 5:00 and Thursday 8:30 - 5:00 to cover all unit required for the full qualification. Individual training and assessment strategies will be developed to reflect individual students circumstances.

How will I study?

For this offer students are required to have completed SIT30816 Certificate III Commercial Cookery or equivalent. This qualification reflects the role of commercial cooks using a wide range of cookery skill and have a sound knowledge of kitchen operations. They work with some independence and under limited supervision and may provide operational advice and support to team members.
