About the Course

This qualification reflects the role of commercial cooks who have a supervisory or team leading role in the kitchen. They operate independently or with limited guidance from others and use discretion to solve non-routine problems.
This qualification provides a pathway to work in organisations such as restaurants, hotels, clubs, pubs, cafes and coffee shops, or to run a small business in these sectors.

Possible job titles include:
chef
chef de partie.

No occupational licensing, certification or specific legislative requirements apply to this qualification at the time of publication.

Available as an apprenticeship

On-campus learning of theoretical content will be supplemented with workplace experiences. Students will have access to workplaces which can provide experiences and learning to support the agreed units for the qualification. (for apprentices)

How will I study?

Delivery Location: Orange College, March Street Campus

You do not need to be an apprentice to join this course. You will be expected to complete self paced activities, research and assignments for the managerial units in your own time.

You will be provided with a detailed program and delivery schedule at the commencement of the course. You will have dedicated time with your teacher to help you with your management units. The management units are delivered via workbooks, tuition sessions and/or workshops. The duration of this course is 1 year.
This course is only for students who have completed a Certificate III in Commercial Cookery in the past 5 years and focuses on the managerial units to prepare you to manage and run your own kitchen. You will be eligible for a discounted price for this course based on your previous qualification via RPL or unit credits. An individual quote will be made for you once all your documentation is received via the application process. Please include a current resume and transcripts from your Certificate III Commercial Cookery and other relevant training in your application.

This program includes activities which are to be completed in your own time.

When will I study?

Class attendance is Part time

Attendance at TAFE is one day per week or by negotiation with your teacher depending on your previous qualification and the units you have completed. Your starting day is Wednesday from 08:30 until 16:30.

Course length: 8 hours per week for 1 Year

Start Date: 6 February 2019
End Date: 16 December 2019

What will I pay?

A course materials charge of $120 is applicable to this course. This fee provides you with a management learner kit for you to take home.

The amount you pay will depend on your individual circumstances.

TAFE NSW Government-subsidised fee (for eligible students): Up to $2,750.00 per course (GST free).

The fee that is displayed is the price for a student completing their second qualification and meeting eligibility criteria. The fee you pay may be lower depending on your personal circumstances and eligibility for a subsidised place, a concession or an exemption. In some cases there are limited government subsidised places available.

This course is for APPRENTICES only. You will be provided with a detailed program and delivery schedule at the commencement of the course. In addition to your class day, you will have dedicated time with your teacher to help you with your management units. The management units are delivered via workbooks, tuition sessions and/or workshops. The duration of this course is 2 years.

There are no formal entry requirements for this qualification. You will need the following uniform and equipment: or successful completion of this course, you will need:
- A traditional full chef’s uniform
- A lockable tool box preferably plastic
- Full range of chefs trade kit including:
- 20cm cooks knife
- Paring knife
- Flexible Filleting knife
- Boning Knife
- Serrated knife
- Palette knife
- Stirring spoon wooden or plastic
- Rubber/plastic scraper
- Piping bag
- Selection Nozzles
- Thermometer preferably digital
- Vegetable peeler
- Pastry brush
- Sharpening steel
- Sharpening stone

This program includes activities which are to be completed in your own time.

Attendance at TAFE is one day per week. The day of the week will change each semester to reflect your stage in the course. Your starting day is Wednesday from 08:30 until 16:30.

How will I study?

There are no formal qualifications required to enrol in this course. This course is also available as an articulation path for those who have successfully completed Certificate III in Commercial Cookery. This qualification is available for both trade and non-trade and reflects the role of commercial cooks who use a wide range of cookery skills. They use discretion and judgement and have a sound knowledge of kitchen operations. They work with some independence and under limited supervision and may provide operational advice and support to team members.
