TAFE NSW Orange students and teachers are encouraging the community to experience the culinary creations and exceptional service of the Dharra Ngurang training restaurant.
Dharra Ngurang (Wiradjuri language for eating out) is a fully-licensed restaurant operated by TAFE NSW Orange Certificate III Commercial Cookery and Certificate II and III Hospitality students and offers a three-course menu for just $35 per person.
TAFE NSW Hospitality student, Meg Rands, said the restaurant provided the opportunity for students to learn and put into practice important skills that will help them forge successful careers in the hospitality industry.
“The kitchen and simulated restaurant is the perfect learning environment and has given me an insight into what it is like to work in a restaurant,” she said.
“Customers are more accepting if you make a mistake and you can try a bit of everything from learning how to make coffee and responsibly serving alcohol to perfecting customer service and wine pairing.”
TAFE NSW Head Teacher of Tourism and Hospitality, Amanda Glassop, said the commercial kitchen and restaurant were invaluable facilities in preparing students for the fast-paced hospitality industry.
“You notice the increase in skill, confidence and ability while the restaurant is open and many regular diners comment on the professionalism of the wait staff and calibre of the meals,” she said.
“Menu creation is taken very seriously by the apprentice chefs with one student each week choosing the menu and acting as head chef in control of the kitchen and his/her fellow apprentices.
“The apprentices are encouraged to create menus using our environmentally sustainable food philosophy using seasonal and locally sourced ingredients.
“The restaurant is an essential component of ensuring our cookery and hospitality graduates are job-ready. There is no experience substitute for a full-service dining room with paying customers and real-time demands to prepare students for life in the dynamic hospitality industry.”
